Honey Roasted Chicken  (Serves 6)
 
2 pounds chicken pieces (breasts, thighs and drumsticks), skinned, all visible fat removed

1 cup honey

1/2 cup reduced-sodium teriyaki sauce

1/4 cup orange juice

1 tablespoon Dijon mustard
 

Preheat Electric Skillet to 375 F.

Rinse chicken and pat dry. Spray Electric Skillet with Vegetable oil. Place chicken in a single layer in Electric Skillet. In a medium bowl, stir together remaining ingredients. Pour over chicken pieces.

Cook covered, basting with the honey mixture occasionally, about 25 to 30 minutes, or until chicken is tender and no longer pink.


Pesto "Fried" Chicken  (Serves 6)
 
2 to 2 1/2 pounds chicken pieces (breasts, thighs and drumsticks), skinned, all visible fat removed

3 tablespoons purchased pesto or homemade pesto

1/4 cup cornflake crumbs

Fresh lemon or lime wedges (optional)
 

Preheat Electric Skillet  to 375 F.

Rinse chicken and pat dry. Spray Electric Skillet with Vegetable oil. Place breasts and thighs bone side down in Electric Skillet. Add drumsticks and brush top of chicken with pesto and sprinkle with cornflake crumbs.

Cook, 35 to 45 minutes or until chicken is tender and no longer pink. Serve with lemon or lime wedges if desired.


Pan-Seared Tuna with Mandarin Orange Pico De Gallo  (Serves 4)
 
Vegetable oil spray

1/2 cup chopped onion

1/2 teaspoon bottled minced garlic

1 tablespoon balsamic vinegar or red wine vinegar

1 teaspoon brown sugar, firmly packed

1 11-ounce can mandarin orange sections, canned in light syrup, drained

1/3 cup chopped tomato

1/3 cup chopped avocado

1 tablespoon lime juice

1/8 to 1/4 teaspoon crushed red pepper flakes

2 tuna steaks (about 1 pound total)
 

Spray a 2 or 3qt saucepan with vegetable oil. Place over low-medium heat. Add onion and garlic and cook until onion is tender, about 5 minutes.

Stir in vinegar, brown sugar and pepper flakes. Cook and stir until sugar dissolves, about 2 to 3 minutes.

Remove from heat and stir in remaining ingredients except tuna. Set aside.

Rinse fish and pat dry. Set aside.

Spray 11" skillet with vegetable oil. Place over low-medium heat. Add fish to hot skillet and cook about 5 minutes per side, or until fish flakes easily when tested with a fork. Cut each steak in half to make 4 portions. Serve fish with mandarin orange mixture.

Chicken & Rice Dinner           Prep/Cook: 15 minutes  Serves: 4


Ingredients:
1 tbsp. vegetable oil
4 skinless, boneless chicken breasts
1 can (10 3/4 oz.) Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 1/2 cups water
1/4 tsp. paprika
1/4 tsp. ground black pepper
2 cups uncooked instant white rice *
2 cups fresh OR frozen broccoli flowerets


Directions:

HEAT EOC skillet. Cook chicken 10 min. or until browned. Remove chicken.
ADD soup, water, paprika and pepper. Heat to a boil.
STIR in rice and broccoli. Return chicken to pan.
Sprinkle additional paprika and pepper over chicken.
Cover and cook on low heat 5 min. or until chicken is done.
TIP: *For creamier dish, use 1 1/2 cups rice.


Beef-Topped Potatoes
Prep: 10 minutes
Cook: 5 minutes
Serves: 3


Ingredients:

1 can (19 oz.) Beef with Country Vegetables Soup
1/8 tsp. ground black pepper
1 cup cooked broccoli flowerets
3 hot baked potatoes, split
Shredded Cheddar cheese


Directions:
MIX soup, pepper and broccoli in saucepan. Heat through, stirring occasionally.
SERVE over potatoes. Top with cheese.
TIP: To bake potatoes, pierce potatoes with fork. Bake at 400°F. for 1 hr. or microwave on HIGH 7 to 10 min. or until fork-tender.Use 1 1/2 cups fresh broccoli flowerets for cooked broccoli.

stir-fry cubed chicken. Remove chicken and add vegetables; stir-fry until cooked. Add chicken and mix together with cottage cheese. Pour food into bowl and set aside. Preheat 10 in. gourmet skillet and wipe with olive oil. Mix eggs, pancake mix, warm water to make mix. Cook batter, add chicken mix, fold and cover with cream. Cod (11 in. skillet) 1 cod fillet,2 tbsp. Seasame oil 1/8 cup Kikkoman soy sauce, minced ginger root mix soy sauce, seasame oil and minced ginger root. Pour onto cod in skillet. Medium heat click low.

Ingredients
1 or 2 halibut fillets/steaks cup chopped green onions 2 tblsp. Fresh ginger #2 cone 2 tblsp. Garlic black bean sauce 1 tblsp. Soy sauce
2 tblsp. Brown sugar 1 tblsp fresh lime juice

place fillets or steaks in cold skillet and squeeze fresh lime juice over top. Shred fresh ginger over top of fish and spread. In small mixing bowl, mix together garlic black bean sauce, soy sauce and brown sugar. Pour sauce mixture over fish. Cover entire surface area of fish with chopped green onions. Cover. Medium click low and cook for 6-8 minutes.
 
sweet potato bisque     
Ingredients
2 celery
1 tart apple 2-3 sweet potatoes
cup shallots 2 cups milk
1 cup chicken broth 2 tblsp sherry
1/8 tsp ground allspice 6 tblsp plain yogurt (reduced fat) 1 tblsp fresh parsley

Instructions
process celery and apple on the #2 cone, potatoes on the # place in saucepan with shallots. Add milk, broth, sherry (optional),and allspice. Cover; cook over med heat click low for 20-25 min strain and process veggies or mash. Serve with dollop of yogurt and sprinkle of parsley

Instructions
put all vegetables into mixing bowl. Mix in flour, eggs, parsley, parmesan cheese, lemon/lime juice and pepper. Add shredded mozz. Cheese with above ingredients. Preheat skillet on medium heat until water beads. Melt a pat of butter into pan. Drop mixture into pan by heaping tablespoons, flatten them out into patties and cook for a few minutes on each side until golden brown.
 
pineapple upside down cake     
Ingredients
yellow cake mix
3 eggs 1 can pineapples 1 carrot
1 apple 1 zucchini
1 celery stalk 3-4 tablespoons butter
cup brown sugar

Use the Electric Skillet
Instructions
melt butter and brown sugar in skillet at 325. Mix cake with eggs and veggies cut on the #1 cone. Place pineapples on the melted sugar and butter and put cake on top of pineapples. Cover and cook and set timer for 5 minutes after skillet turns off let sit for 15-20min or until there is no moisture left on cake. Flip on to large cake pan.
 
german cabbage     
Ingredients
1 head cabbage
8 oz. Sour cream 1 medium onion
pepper 2 bratwurst or kielbasa

preheat skillet on medium. Brown brat chunks. Cut onion on #2 cone sauté with brats. Add cabbage cut on the #5 cone. Mix. Add sour cream and pepper. Once valve clicks, turn to low. Cook 20 minutes

saturate corn husks with water; place in bottom of pan. Place corn on husks. Cover; cook over medium heat until vapo-valve clicks, reduce heat to low and cook 12 to 15 minutes
 
lasagna (electric skillet)     
Ingredients
1 lb. Hamburger
1 pint lg. Curd cottage cheese 8 oz. Mozzarella #1 cone
box lasagna noodles parmesan cheese #1 cone 1 32 oz. Jar Prego cheddar cheese #2 cone
garlic salt 1 onion #2 cone
5 mushrooms #4 cone 1 bunch fresh spinach
bunch of parsley 1 bunch broccoli flowerettes #3 cone

degrease hamburger, onion and mushrooms in the 3 quart qith steamer insert. Finely chop spinach and parsley. Add both along with broccoli and sauce with cooked meat. Place meat sauce in electric skillet. Top with 1/3 of the mozzarella and cheddar cheese. Add a layer of uncooked noodles. Then add cottage cheese. Add another layer of the meat sauce and top with another 1/3 of the cheeses. Add another layer of noodles and top with the rest of cheese and parmesan. Bake at 275 for 30 minutes and let stand for 10 minutes.

poor man rellanos (electric skillet)

pint of sour cream
can of cream of chicken soup
2 cans of green chili peppers
1 lbs. Grated Monterey jack cheese
3 packages boneless chicken thighs (cooked & cubed)
 
Instructions
mix soups, sour cream and chili. Then spoon coating in the electric skillet. Cover with flour tortillas, layer mix, chicken and cheese. Repeat layers and cover with tortillas and cheese. Cook at 300-325. Once valve clicks, reduce to simmer and let stand for 15 min., Popcorn (electric skillet),cover the bottom of the skillet with kernels and cover. Turn the skillet to 435 and wait till it stops poppin. Quick easy. No oil!
 
veggie quesadilla (11 in. square griddle)

shred cheddar cheese on #1 cone. Cut onion, green and red pepper on #4 cone. Preheat griddle on medium until water beads. Turn heat back one notch. Place tortilla on griddle, add cheese, peppers, onion and spinach. Put another tortilla on top. Wait for 5 minutes and turn. Cut up and serve with salsa.
 
kanada borscht (11 in. skillet)

cut up garlic on #1 cone. Chop onion on #2 cone. Cut potato in small cubes. Preheat 4 qt. On medium until water beads. Add ginger, garlic and onion. Stir until starts to brown. Add curry paste and mix. Add chicken and potato stir and cover. Once vapo-valve clicks, turn to low for 25 min. Add coconut milk, cover and continue to cook for additional 10 minutes on low.

2 cups milk

Instructions
heat skillet to 275. Combine 6 cups bread cubes, cup of sugar and vanilla, mix well. Melt stick of butter and mix with bread and sugar. Beat eggs and add in milk stir together. Pour egg/milk mix over bread mixture allow to soak for 2 min. Add raisins and stir. Spray skillet, pour in batter, and spread evenly. Cover and cook @ 275 or until center is firm.
 
hashbrowns

Instructions
preheat skillet to medium heat. Spray and wipe. Shred potatoes on #1 cone. Rinse potatoes with warm water. Remove excess water. When griddle is hot enough to make the potatoes sizzle, add potatoes. Brown 6 minutes turn and cook 6 minutes.
 
omlette

3 eggs whipped

preheat pan with butter and wipe off excess. Add eggs. Once almost cooked, add veggies and cheese and fold.
 
apple cinnamon pancakes or lemon zest pancakes

Use bisquick or any pancake mix and follow recipe on back.

Pre-heat griddle on medium heat about 5 minutes until water beads up when dropped on hot griddle. Now its ready to put pancakes on. As pancakes start to dry around edge cut apple with #4 place on pancakes sprinkle cinnamon, turn them and cook until done. If using electric skillet, cook in preheated skillet at 425.

cut apples in half. Remove stem, seeds, and buds. Rinse. Cut apples on #2 cone. Put apples in pan sprinkle cinnamon. Turn heat to medium and cook until valve clicks then reduce to low heat and continue cooking for 10 minutes or until done enough to mash.
 
enchiladas     
Ingredients
3 pkg corn tortillas 2 cans enchilada tomato sauce
1 white onion 1 lb. Monterey jack cheese (shred) #2

1 lb. Med sharp cheese (shred) #2

Use the Electric Skillet
Instructions
brown ground beef with onion in 3qt. Steamer until cooked. Pour enchilada tomato sauce in 3qt. And heat. Wet each tortilla with sauce until soft. Roll up tortillas with 1 tablespoon of cheese inside. Fill skillet, two layers deep with stuffed tortillas. Spread ground beef, onions, sauce and cheese over tortillas and cook at 300 degrees until the valve clicks. Turn down to low and cook for 10 15 minutes.
 
quiche

1 whole garlic
1 zucchini (cut into long strips) #3 cone
1 yellow squash
1 cup broccoli crowns
2 carrots #4 cone
1 bell pepper (sliced)
1 onion #5 cone
1 fresh ginger root tbsp/ #1 cone
1 can sliced water chestnut
1 tbsp olive oil
1 can pineapple chunks
cup of light soy sauce
1 can mandarin oranges (or fresh)

Use the 7 qt. Wok
Instructions
preheat wok on medium. In 1-tablespoon oil sear garlic and remove. Combine vegetables in bowl (stir 5 minutes). Add and stir in ginger, canned fruit and soy sauce. Combine all ingredients in wok, turn to medium then low.
 
meatloaf     
Ingredients
2 lbs. Hamburger
1 each carrot
potato
2 eggs
small onion
celery stalk
40 cracker squares or Italian bread crumbs
8 oz. Can tomato sauce
mozza cheese (optional)

Use the Electric Skillet
Instructions
peel celery stalk on #1 cone, peeling to the back of the hopper. Crumb crackers on #1 cone. Cut carrot, cabbage and potato on #2 cone. Add small can of sauce and mix. Season if desired. Use electric skillet or 11 in. skillet. Place mix into skillet and press out into skillet leaving a small pocket on one side of skillet for excess grease, which will cook out of hamburger. Put 1/3 can of tomato sauce on top of meatloaf. Cover skillet and cook on medium heat until valve clicks, then turn to low heat for 30 minutes. If desired, shred on #1 cone, pound of cheese of your choice on top of meatloaf. Cover and cook for 5 minutes on low. For garnish, cut up green pepper in rings and place on top of cheese.

preheat skillet on medium or slightly higher. Once skillet is preheated sear one side of steak 3-4min or when it releases from the pan. Season and flip cook to desired doneness. (Check cookbook for cooking times) then let us see how much you want to use the barby after you sink your teeth in to this juicy sucker!!!!.
 
honey lemon garlic chicken     
Ingredients
1 4lb. Chicken
1 lemon
15 garlic cloves
4 tbsp. Honey

Use the 4 qt. Roaster
Instructions
place peeled whole garlic cloves on bottom on 4 qt. Take whole lemon and poke holes in it w/fork. Place lemon inside of skinned chicken. Put chicken onto garlic in pan. Pour honey on top of chicken. Turn to medium and cover. Once vapo-valve clicks, turn to low for 30 min. (You can put 4qt. In oven after chicken is cooked to brown @400 for a few minutes).

melt butter and brown sugar in pan. Put salmon on top and slice lemon on salmon. Cook for 20 minutes on low. Serve with glaze overtop and lemon.
 
Chocolate health cake     
Ingredients
1 can blue berry (cherry) pie filling
chocolate cake mix
2 eggs
apple #2 cone
1 banana #3 cone
carrot #1 cone

Use the Pudding Pan
Instructions
put can pie filling in bottom of pudding pan. In bowl, add choc. Cake mix and 2 eggs. Shred apple, carrot and banana to cake mixture. Put mixture on top of pie filling. Place pudding pan on rack in 7-quart roaster).

Instructions
put a dry paper towel in 7 qt. On medium to tell when pan is ready. When paper turns brown pan is ready. Place roast in dry pan. Press down well. Turn when brown 5 to 6 minutes. Season as desired. Add onions, quartered potatoes,carrots,etc. Then add rack with pudding with cake. (See below) cover with Dutch oven lid. Turn heat down to just above simmer when water starts to bubble out the side. Cook approx. 2 Hours. Make gravy from drippings, if desired. For an alternate season, use a package of dry onion or mushroom soup mix and a small bottle of Worcestershire sauce.
